I pomodori ripieni di fine estate... summur stuffed tomato




quando acquisto pomodori, nel momento esatto in cui pronuncio la parola "pomodori" mi torna in mente mia madre che invece al plurale di questo sostantivo ricorreva alla formula   " pomidoro" ed allora sorrido...
 dedico quindi a questo simpatico e bizzarro ricordo una ricetta che le piaceva molto 


Pomidoro ripieni  




Preparazione 30min
Cottura forno 50’
Difficoltà facile










Ingredienti 
per 4 persone

4 pomodori ramati rossi maturi piuttosto grandi
2 cucchiai da minestra di riso 
1 zucchina
1 cucchiaio di capperi sotto sale
1 cucchiaio di olive nere denocciolate
1 cucchiaio di olive verdi denocciolate
200gr di tonno
4 acciughe
10 foglie di basilico
Un pizzico di Sale e pepe
2        cucchiai di olio d’oliva








Preparazione

Lavare ed asciugare i pomodori
Accendere e riscaldare il forno a 130°

♥Tagliare e rimuovere delicatamente la parte superiore dei pomodori e tenere da parte le calotte che serviranno da coperchio durante la cottura.
♥Incidere con un coltello l’interno ed aiutandosi con un cucchiaio rimuovere tutta la polpa.
♥Mettere la polpa in una ciotola e con il mixer frullarla fino ad ottenere un passato fine ed omogeneo.
♥sgocciolare il tonno, 
♥In una ciotola capiente preparare il ripieno, aggiungendo e mescolando con cura tutti gli ingredienti:
Il tonno sgocciolato del liquido di conserva
le olive tagliate a rondella
i capperi sciacquati ed asciugati
 le acciughe sminuzzate
 ♥la zucchina ridotta ad una fine dadolata
 il basilico tritato
 l’olio il sale ed il pepe.

♥ mescolare con cura ed aggiungere il riso sciacquato e 250 ml della polpa passata.
Prendere con cura i pomodori svuotati ed aiutandosi con un cucchiaio riempirli per  ¾ con il ripieno
♥disporli verticalmente in una teglia e richiudere con la calotta.
Passare in forno per 50 minuti, al termine dei quali controllare la cottura del riso.
♥se il riso risulta morbido la cottura è ultimata, spegnere il forno e lasciare ancora qualche minuto,
i pomodori sono buoni serviti sia freddi che caldi, possono essere un simpatico antipasto o uno stuzzicante contorno.

Ingredients

Serves 4

4 big red rounded tomatoes
2tbsp rice
1 courgette
1tbsp pitted black olives
1tbsp pitted green olives
2tbsp capers
200gr. Canned tuna fish
3        anchovies
4        Basil leaves
6        Tbsp olive oil
Salt and ground black pepper  

Preheat the oven to 150°C/ 300°F/gas 5
Wash tomatoes and gently dry on kitchen paper
Cut off the upper part of each tomato and take them
With a knife and a spoon scoop out the inner part of each tomato
Turn with a blender the inner part into cream

In a large bowl mix all the ingredients:

Washed rice
Finely Sliced olives
Washed and dried capers
Chopped Tuna fish
Trimmed basil
Anchovies coarsely cut
Finely diced courgette
Add olive oil, salt and grounded black pepper



Gently fill each tomatoes up to ¾
Cover with the upper part each tomato and place in a baking tin.
Bake in the oven for 50 minutes or until the rice is soft.
 Filled tomatoes can be served both hot or chilled as a starters or a nice side dish.
